Vegetable Rice Kabab Recipe – Cutlets – Video
Vegetable rice kabab, a fried cutlet snack made with rice as its main ingredient is gluten free. Veggies give it a crunchy and juicy taste.
- 1 Cup Boiled Rice
- 1/2 Cup Mozzarella Cheese (Small Cubes 1/2 inch each)
- 1/4 Tsp Black pepper powder (Ground, Powder)
- 1 Tsp Red Chili Powder
- 3 Number Bread Slice
- 2 Tsp Tomato Sauce
- 1/2 Cup Mixed Vegetables (Capsicum (Bell Pepper), French Beans, Carrot, Onion, Chopped into small pieces)
- 1 Tsp Cornflour
- 1/4 Tsp Garlic (Grated)
- 10 Number Basil leaves
- 1 Tsp Salt
- Chop all the Vegetables in very small pieces. Small pieces are important as they all need to merge together.
- We will first prepare the filling/stuffing for rice Kabab. Add cheese, Basil Leaves and Black Pepper in a bowl. Mix well. Keep this aside. We will use this filling to stuff rice kabab later.
- We will now prepare the rice kabab’s outer layer. Take another bowl, add Rice and all the chopped vegetables.
- Now add Garlic, Cornflour, Salt, Red Chili Powder and Sauce. Tear off bread slices into small pieces and add to this mixture.
- Mix all the ingredients with the help of your hand or a spatula.
- After mixing, we are ready with the Kabab Mixture or you can say its outer layer.
- Lets make the rice Kabab. Spread few drops of Oil on your left hand palm.
- Take small amount of Kabab Mixture and flatten it on your palm.
- Add the Cheese mixture that we kept aside in step 2 above, at the center of the rice Kabab.
- Close all the corners of the Kabab so that cheese sits inside. You can give any shape to your kababs. We are keeping them oval or round
- You can follow the same steps to get all the kababs ready from rest of the mixture.
- Once done, rice Kababs are ready for frying.
- Heat Oil in a frying pan on high flame. you should have enough oil in the pan for deep frying the kababs.
- Once Oil is hot, add Kabab in for frying. Turn the stove on medium and let them fry until they get golden brown from all sides.
- Flip Kababs when they turn golden brown from one side.
- Once they achieve golden brown color from all sides, take them out of the Oil and switch off the stove.
- Vegetable Rice Kabab are ready to serve hot with your choice of sauce/chutney.
- Vegetable Rice Kabab are ready to serve hot with your choice of sauce/chutney. We like to serve them with Tomato Garlic Chutney or Dahi Chutney.
