Pav Bread is used in Bombay Pav Bhaji and Vada Pav. Known as Dinner rolls or Ladi pav bread can be baked with egg in an Oven or microwave Convection easily.

Pav bread is primarily used in making Bombay Pav Bhaji and Vada Pav.
We are today sharing the tried and tested recipe of making the awesome super soft Ladi Pav bread at home. They are pretty easy to bake at home in the sense that you do need much ingredients. And yes, this recipe contains egg.
We normally buy it from market but found the inspiration to make them at home when we were looking for them in an Indian store in USA. We failed miserably as the large Pav rolls were not available anywhere.
So, if you are also in same situation as ours, this recipe might come handy!
As far as usage is concerned, you can use it in Pav Bhaji, Vada Pav, as a Dinner rolls to go with Butter (remember the ones served in AirPlane food), a sandwich and an Indian style burger.
- 2 Cup All Purpose Flour (Maida)
- 1/2 Cup Milk (Full cream or fat free – Your choice)
- 1/4 Cup Powder Sugar (If you have normal sugar, you can grind it to fine powder and then use it here.)
- 1/4 Tsp Salt
- 1 Tbsp Dry Yeast
- 2 Number Eggs (1 full egg Yolk + egg white and 1 other egg only Yolk, no white )
- 30 Gms Butter Unsalted (Salted or Unsalted)
Preparing Pav Dough
- If you want to use normal sugar, you can grind it to fine powder and then use it here.
- Start with warming the milk for about 30 seconds in Microwave. Then add Yeast and let it sit for 2 minutes. We will use it later.
- On the other hand, take a bowl and add Butter. Add Sugar and mix them together.
- Once butter and sugar are mixed, add it to All-purpose-flour along with Salt. Add milk with yeast as well.
- Now, add 1 full egg and other egg’s yolk only. You can separate the egg white by filtering it in the egg shell.
- You can use left-over Egg white in making milk shake or a Fruit Smoothie. It is advised in weight loss diet programs due to its high protein content.
- The next step is to make a smooth dough with the flour that we have. Knead it with hands to make a dough.
- We can make approximately 6-8 Pav bread with this quantity of ingredients. 6 Pav are good for serving 3 people.
- Once you see dough shaping up, add 1 Tbsp of Oil and then knead once again with your hand.
- Dough is ready.
Fermentation of Dough
- Grease the bowl the one containing dough with Oil on its inner walls. This will help create a non-sticky layer around dough. Now, cover it with a lid. Keep it aside in a warm place for fermentation for 1 hour.
- We normally keep it in Oven switched OFF state as it is closed and warmer than the room temperature.
Rolling Fermented Dough
- After 1 hour, take it out of Oven. Roll this fermented dough into a long round shaped log. Slice this log into 6-8 pieces.
- Also, take a baking tray round or square – whatever shape you have and grease it with butter. The butter layer will create a non-sticky layer between tray and Pav bread.
- Pick one piece. Stretch it from bottom and fold to give it a clear and smooth face. Keep it in baking tray. Line up others in same fashion.
- Normally, professional bakers use a rectangular tray for Pav. You can use any or whatever you have. We are using a round one.
- Shape of Pav bread won’t make a big difference, the taste and material would!
- Our baking tray is ready. We need to keep it once again for fermentation for another 1 hour before we start baking.
- So, keep it in any Ovenagain in switched Off state or any other warm place in your Kitchen for another 1 hour.
Baking the Pav Bread
- After an hour, you would see that Pav have fluffed a lot after fermentation.
- Now, we need to bake them. So, start with pre-heating the Oven at 375 F (190 C) for 2 minutes.
- After 2 minutes of pre-heat, keep the baking tray in Oven and let them bake for 20 minutes on 375 F (190 C).
- Every Oven has different heating capacity and hence the total time might differ. But it should be in the range of 18-20 minutes.
- The idea is to have the color as light golden brown and when you see it coming up, the Pav are ready.
- After 20 minutes of baking, Pav are ready. You can see the golden brown color on the face of Pav.
- Grease their face with Butter to show off some shine and avoid hardening of top surface.
- Pav Bread can be stored for about 10 days without refrigeration.
- It is primarily used in making Pav Bhaji , Vada Pav or Burgers. Some people also like to eat it as tea time snack with stuffing Aloo Samosa or Coriander chutney or just Butter.
