Gobi paratha is one another type of stuffed paratha. It is quite famous in Punjabi cuisine just like an aloo paratha. It is normally enjoyed with sweet curd and mango pickle.

Ingredients:

Ingredients for Cripsy Gobi Paratha

  1. 4 Florets Grated Cauliflower
  2. 1 Chopped Green Chili
  3. 2 Tsp Fresh Grated Coriander Leaves
  4. 2 Tsp Grated Ginger
  5. 1 Cup (Our 1 Cup = 240 ML) Wheat Flour Dough – Will be used for 2 Paranthas
  6. 1 Cup (Our 1 Cup = 240 ML) Dry Wheat Flour – Will be used for rolling 2 Parathas
  7. 2 tsp Oil
  8. 1/3 Tsp Salt
  9. 2 pinch Garam Masala
  10. 2 Pinch Amchoor Powder
  11. 1/4 Tsp Red Chili Powder
  12. 2 Pinch Asafoetida
  13. 1/4 Tsp Cumin Seeds

Method:

Grate Cauliflower Grate the Cauliflower florets in a plate.
Add all ingredients Add Chopped Green Chili, Fresh Grated Coriander Leaves, Grated Ginger, Salt, Garam Masala, Amchoor Powder, Red Chili Powder, Asafoetida and Cumin Seeds.
Mix ingredients well. Mix it well so that all spices coat the grated Cauliflower. You will witness the nice color of spices in this mixture.
Coat the dough with dry wheat flour Now take enough Wheat flour dough for making of 1 paratha and give it a round shape with your hands. Coat it with dry wheat flour. Coating with dry flour prevents it from sticking to your rolling pad while rolling it into a chapati.
Roll it into a flat bread in a round shape Roll it into a flat bread in a round shape (as you see in the image) with the help of a rolling pin. You can give it any shape you want. We have made it circular.
Cover this mixture from all sides by picking the flat bread sides Once done, add the Cauliflower mixture at the center of flat bread. Cover this mixture from all sides by picking the flat bread’s sides (as shown in the image). Make sure that there is NO open corner left to squeeze out the cauliflower.
Close from all the corners Sprinkle dry wheat flour over the prepared ball of gobi paratha.
Roll it again with filling Roll it again to make a flat bread with soft hands (as shown) with the help of a rolling pin. Do not exert pressure else the cauliflower might spill out of the packet.
Add it to the heated pan Heat a pan on medium flame. once the pan is hot, add the rolled flat bread to the heated pan.
Flip it once slightly cooked from bottom After 30 seconds, you will see that the flat bread’s lower surface has hardened a bit. Now, it is time to flip it. After the flip, spread 1/2 tsp of Oil/Ghee on the flipped surface of the paratha.
Spread oil & cook After 20 seconds, flip it again. Now spread Oil/Ghee this side of flat bread. Keep on cooking by flipping and applying Oil/Ghee, till it gets golden brown from both sides. Oil/Ghee should be applied as per your own appetite for eating it
It is cooked Once your Gobi paratha attains rich golden brown color from both the sides, it is cooked and ready to serve.
