Wash and chop ghiya in long big pieces (finger Size).

Now you can deep fry your ghiya pieces or just roast them in some oil in a pan till they become light golden in color. Then keep aside for later use.

Now heat 1/2 tbsp of oil in a pan. Add cumin seeds.

Now add grated onion. Cook till it become pink in color.
|
|
Add grated tomatoes and green chilies. Mix well.
|
|
Now add salt, red chili powder, garam masala, turmeric powder and amchoor. Mix well.
|
|
Cook till the oil separates from the mixture. Now add 1/2 cup of water and mix well.
|
|
Add fried ghiya in it. Cover the pan with the lid and let it cook on low flame till ghiya become soft/tender.

Now wash and chop the coriander leaves. Garnish prepared Ghiya Lababdar with coriander leaves.

Serve hot with Tandoori Chapati or parantha.
