Many of us don't like ghiya vegetable much but I am sure once to try this new style of preparing fried ghiya, you will start liking it.

Preparation Time:
30 Min .
  1. Wash and chop ghiya in long big pieces (finger Size).
  2. Now you can deep fry your ghiya pieces or just roast them in some oil in a pan till they become light golden in color. Then keep aside for later use.
  3. Now heat 1/2 tbsp of oil in a pan. Add cumin seeds.
  4. Now add grated onion. Cook till it become pink in color.
  5. Add grated tomatoes and green chilies. Mix well.
  6. Now add salt, red chili powder, garam masala, turmeric powder and amchoor. Mix well.
  7. Cook till the oil separates from the mixture. Now add 1/2 cup of water and mix well.
  8. Add fried ghiya in it. Cover the pan with the lid and let it cook on low flame till ghiya become soft/tender.
  9. Now wash and chop the coriander leaves. Garnish prepared Ghiya Lababdar with coriander leaves.
  10. Serve hot with Tandoori Chapati or parantha.

  3. Onion - 2
  4. Green Chili - 2
  5. Salt - To Taste
  6. Red Chili Powder - 1/2 Tsp
  7. Turmeric Powder - 1/4 Tsp
  8. Coriander Powder - 1 Tsp
  9. Garam Masala - To Taste
  10. Mango Powder (Amchoor) - 1/4 Tsp
  11. Cumin Seed - 1/2 Tsp
  12. Oil - For Cooking & Frying
  13. Coriander Leaves (Chopped) - 1 Tbsp
  14. Water - 1/2 Cup
